Non so quante volte sono stata tentata al supermercato di acquistare le spinacine di pollo. Io controllo sempre le etichette e ci tengo a sapere esattamente cosa sto scegliendo di mangiare. Nel caso delle spinacine, oltre a una piccola percentuale di pollo e una minima porzione di spinaci c’è tanto altro. Vista la semplicità della ricetta e la reperibilità degli ingredienti, potevo farmele da sola. Per dare una nota più croccante le ho panate con i fiocchi di mais tostati, rendendole così adatte anche a chi segue una dieta senza glutine.
INGREDIENTI:
- 500 g spinaci congelati
- 400 g macinato di pollo
- 4 cucchiai albume
- sale q.b
- 2 cucchiai parmigiano
- fiocchi di mais tostati
PROCEDIMENTO:
Fai bollire gli spinaci in acqua salata per qualche minuto e scolali. Sbollenta per circa 2 minuti il macinato di pollo, scolalo e schiaccialo con una forchetta. Unisci gli spinaci e mischia tutto. Aggiungi il sale, il parmigiano, l’albume e amalgama bene. Con un bicchiere schiaccia grossolanamente i fiocchi di mais, o frullali. Inizia a formare le spinacine: prima forma una polpetta e poi schiacciala, dandole una forma regolare. Panale su tutti i lati con i fiocchi di mais e disponile su una teglia con carta forno leggermente oliata. Inforna a 180° per 15 minuti.
