Questi panini ai semi fatti in casa sono facili da preparare, ma come per tutte le cose buone necessitano di tempo. Io consiglio sempre di farli il pomeriggio o la sera prima in modo da sfruttare la notte come tempo utile alla maturazione dell’impasto. Sarebbe meglio utilizzare una planetaria, in caso contrario ci vorrà tanto olio di gomito! Ricordatevi prima di riporlo in frigorifero, di lasciarlo fuori a temperatura ambiente fino a che non parte la lievitazione: non c’è un tempo prestabilito perché ovviamente dipende dalla temperatura (l’impasto deve raggiungere circa 22°) perciò o dovete armarvi di un termometro da cucina oppure orientativamente lo lasciate fuori per circa 30 minuti in inverno, mentre in estate, potete metterlo subito in frigorifero.
INGREDIENTI:
- 450 farina 0
- 70 g farina di riso
- 100 g farina integrale
- 3 g lievito di birra secco
- 470 ml acqua
- 30 ml olio e.v.o
- semi misti (papavero, zucca, sesamo)
PROCEDIMENTO:
Nella ciotola planetaria uniamo le tre farine ed azioniamo il gancio per farle arieggiare. Aggiungiamo il lievito e versiamo l’acqua a più riprese. Continuiamo aggiungendo i semi e prima di terminare tutta l’acqua, ci sciogliamo dentro il sale e lo versiamo nell’impasto. Una volta terminata tutta l’acqua, uniamo l’olio continuando ad impastare. L’impasto risulterà leggermente appiccicaticcio. Lo lasciamo coperto in una ciotola a temperatura ambiente per circa 30 minuti e poi in frigorifero, se inverno. Se estate lo trasferiamo direttamente in frigo dove dovrà rimanere per circa 12 ore.
Trascorso il tempo, stacchiamo porzioni di impasto da circa 100 g l’uno e chiudiamo ciascuna pallina verso l’interno chiudendo bene. Le schiacciamo leggermente e le facciamo lievitare su una teglia da forno coperte per altre 2/3 ore (fino al raddoppio). Con un taglierino o coltello molto affilato facciamo dei tagli trasversali e inforniamo a 180° per circa 25/30 minuti.
