
I Torvicelli li ho conosciuti grazie al Pastificio Giuliani. Un pastificio che ha collaborato insieme al consorzio “A Torvaianica”, e ad altre figure di riferimento, nella realizzazione di un piatto del territorio che sapesse rappresentarlo al meglio. Nascono così i Torvicelli, così chiamati dall’unione di due nomi “vermicello” (vista la forma molto simile) e “Torvaianica” (nome della cittadina). Sono una pasta semplice, creata equilibrando sapientemente farina di farro, farina integrale ed acqua. Tengono benissimo la cottura e le due farine da cui sono composti donano un sapore antico e autentico che si sposa con qualunque tipo di condimento. Se siete in zona Roma, castelli romani, vi consiglio di andarli a provare, per tutti gli altri speriamo prima o poi ci sia uno shop on line dove poter acquistare questi e tantissime altre specialità di pasta all’uovo e non solo. Ma adesso vi mostro come ho cercato di esaltare al meglio questo nuovo tipo di pasta.
INGREDIENTI:
- 1/2 cipolla
- olio evo q.b
- 150 g guanciale
- 225 g fave congelate
- sale q.b
- 100 g pecorino romano grattugiato
- 450 g Torvicelli
PROCEDIMENTO:
In una padella fai rosolare la cipolla tagliata finemente con l’olio. Aggiungi le fave con mezzo bicchiere d’acqua e lascia cuocere. Aggiusta di sale. Taglia il guanciale a listarelle e fallo rosolare in un pentolino senza aggiungere altre fonti di grasso fino a quando sarà croccante. Uniscilo alle fave ormai cotto e fai insaporire tutto insieme. Cuoci i Torvicelli in acqua bollente salata e nel frattempo prepara la cremina di pecorino: preleva circa 1/2 tazza di acqua di cottura e lasciala intiepidire. Questo passaggio è fondamentale per non far si che la cremina “impazzisca”. Una volta raffreddata uniscila poco alla volta al pecorino grattugiato fino ad ottenere una cremina omogenea e liscia. Scola la pasta al dente e finiscila di cuocere insieme al condimento. Per ultimo aggiungi la cremina di pecorino e una cascata di pecorino grattugiato.
