La tartare in generale che sia di tonno, di salmone è la ricetta più facile che ci sia…dopo il panino con l’affettato si intende! A me piace tantissimo e la preparo spesso come antipasto di una cena a base di pesce. I passaggi e gli ingredienti sono facili e pochissimi, ma necessita di un accorgimento necessario e assoluto: il tonno deve essere rigorosamente abbattuto. Nel caso in cui il tonno che avete acquistato non lo sia, va congelato a -18° per almeno 96 ore e poi fatto scongelare in frigorifero. Questo per scongiurare il rischio di anisakis.
INGREDIENTI:
- 1 trancio tonno fresco abbattuto
- olio evo q.b
- succo di mezzo limone
- sale q.b
- pepe q.b
- prezzemolo fresco q.b
PROCEDIMENTO:
Taglia il tonno al coltello a dadini. In una ciotolina prepara la marinatura unendo il succo del limone con l’olio, il sale, il pepe e il prezzemolo fresco. Nello stesso piatto da portata poni un coppapasta e rimpilo con il tonno tagliato. Con il dorso di un cucchiaio compatta leggermente il tonno, in modo da pressarlo un po’. Versa sopra la marinatura, sfila l’anello e gusta subito.
Nel caso in cui vogliate anticiparvi la tartare, anche se è veramente velocissima da fare, ricordatevi che potete sì marinarla in anticipo, ma in questo caso eliminate il succo di limone ed aggiungetelo solo quando è ora di servirla.
