Ecco una ricetta che ti porterà indietro ai tempi della scuola. Come nella maggior parte delle aule c’era un solo termosifone che scaldava pochissimo. Facevamo a gara per metterci sopra le pizzette, tutte autografate con il proprio nome e racchiuse in quella carta marroncina e panunta d’olio che più di una volta mi ha macchiato lo zaino. Il suono della campanella della ricreazione significava poter mangiare finalmente la pizzetta ormai calda al punto giusto. Sarà stata la nostalgia a spingermi a volerle rifare? E’ cambiata solo una cosa…oggi le scaldo nel fornetto di casa!
INGREDIENTI:
- 400 g farina 0
- 100 g semola di grano duro
- 300 ml acqua
- 4 g lievito secco
- 10 g sale
- 25 g olio
- 200/300 g passata di pomodoro
PROCEDIMENTO:
In una ciotola mischia le due farine. Aggiungi il lievito e versa lentamente l’acqua fino a che non verrà assorbita del tutto. Aggiungi il sale e l’olio. Otterrai un panetto omogeneo che dovrai far lievitare coperto fino al suo raddoppio. Dividilo in pezzature di circa 100 g, impastale un po’ e chiudile bene. Schiacciale leggermente e mettile a lievitare su una teglia oliata, coperta con pellicola, per 1 ora e mezza. Dai forma alle pizzette schiacciandole al centro e non sui bordi, versa il pomodoro e inforna a 250° per circa 15 minuti.
