Ho ottenuto una perfetta sfogliatura grazie a facili e semplici passaggi. I gambi del cipollotto donano all’impasto un aroma gustoso e saporito. Io le preparo e le mangio così appena calde oppure le farcisco con salumi, formaggio spalmabile, tonno.. insomma potete sbizzarrirvi!
INGREDIENTI: (Per 6 piadine)
- 520 g farina 00
- 320 g acqua bollente
- 4 cipollotti
- curcuma q.b
- olio di semi q.b
- sale q.b
PROCEDIMENTO:
In una ciotola unisci la farina, il sale e l’acqua bollente. Impasta prima con una forchetta e poi continua a mano fino ad ottenere un impasto morbido e compatto. Fallo riposare per almeno 30 minuti coperto a temperatura ambiente. Nel frattempo taglia i gambi del cipollotto.
Trascorso il tempo dividi l’impasto in sei parti uguali e ricava sei dischi sottili stendendoli con il mattarello. Spennellali con poco olio e aggiungi in superficie i cipollotti e una spolverata di curcuma. Arrotola ciascun disco su se stesso, ottenendo un filoncino, chiudilo a spirale inserendo l’estremità finale sotto la spirale stessa. Fai riposare coperto per 30 minuti.
Su un piano leggermente infarinato, stendi le spirali cercando di ottenere cerchi regolari. Cuoci a fuoco medio-basso in una padella calda e spennellata d’olio fino a doratura di entrambi i lati. Quando ancora calde aggiungi un filo d’olio e un pizzico di sale.
