INGREDIENTI: (Per 9/10 pasticcini)
- 2 uova a temperatura ambiente
- 80 g zucchero semolato
- 100 g burro
- 80 g farina 0
- 2 cucchiaini lievito per dolci
Per la crema:
- 250 g mascarpone
- 200 g panna da montare già zuccherata (se senza zucchero aggiungete 50 g zucchero al velo)
- 1 cucchiaino di curcuma (opzionale, serve solo per colorarla)
PROCEDIMENTO:
Sbatti le uova (devono essere a temperatura ambiente) con lo zucchero, fino ad ottenere un composto spumoso. Unisci il burro sciolto (non dovrà essere caldo) e infine la farina con il lievito setacciati. Amalgama tutto bene. Versa il composto all’interno degli stampi da muffin precedentemente imburrati e infarinati, fino a poco più della metà dello stampo (in forno lieviteranno perciò cerca di rispettare questa quantità). Inforna a 170° per 20 minuti circa. Falli raffreddare leggermente e quando ancora caldi ricoprili di zucchero semolato su tutti i lati. Se hai ecceduto nel riempire gli stampi e l’impasto sia fuoriuscito, ti basterà rifilarlo con un coltello. Prepara la crema montando la panna con mezzo cucchiaino di curcuma (serve solo a dare un colore più giallino che dà l’idea di una crema chantilly). A parte monta il mascarpone sempre con l’aggiunta di mezzo cucchiaino di curcuma e infine unisci la panna con movimenti lenti dal basso verso l’alto. Riempi una sacca da pasticcere e farcisci i pasticcini come più ti piace.
