Salutiamo la stagione di uno dei miei frutti preferiti, le fragole, con questo millefoglie fresco e facile da preparare. Non necessita di cottura perché utilizzeremo le sfogliatine già pronte, per questo si prepara in pochi minuti, giusto il tempo di preparare la crema chantilly e decorare. Potete preparare la crema anche il giorno prima, l’importante è assemblare il millefoglie solo all’ultimo momento o comunque poche ore prima di essere servito, in questo modo le sfoglie rimarranno belle fragranti e non si ammorbidiranno troppo. Pronti, partenza…via!
INGREDIENTI:
- 600 g sfogliatine (dipende dalla grandezza dello stampo)
- 4 uova
- 1 bustina vanillina
- 40 g amido di mais
- 120 g zucchero
- 500 ml latte intero
- 200 ml panna + 100 g per decorazioni
- 250 g fragole fresche
PROCEDIMENTO:
In un pentolino scalda il latte e sciogli all’interno la vanillina. In un altra pentola inserisci le uova intere, lo zucchero, l’amido di mais setacciato e mischia con una frusta a mano. Accendi il fornello e continuando a mescolare con la frusta, versa il latte ormai caldo a filo poco alla volta, fino a quando la crema non si sarà addensata. Trasferiscila in una ciotola e falla raffreddare coperta con pellicola a contatto, per non far formare la crosticina. Poni il contenitore dove monterai la panna qualche minuto in frigorifero, in questo modo quando verserai la panna all’interno, si monterà molto più facilmente.
Disponi un sotto-torta rettangolare con sopra un anello sempre rettangolare (puoi farlo anche tondo, ma dovrai disporre le sfogliatine diversamente e spezzarle). Inizia a comporre la base disponendo le sfogliatine una accanto all’altra. Unisci la panna montata alla crema pasticcera con movimenti lenti fino a che non sarà omogenea. Inseriscila all’interno di una sacca da pasticcere e ricopri la superficie delle sfogliatine. Crea un altro strato di sfoglia e per ultimo uno di crema. Decora con fette di fragole e qualche ciuffo di panna fresca.
