Se stai cercando una ricetta facile per preparare la colomba di Pasqua fatta in casa, sei nel blog giusto! Infatti qui non troverai tutte le fasi di lievitazione e i passaggi previsti nella ricetta originale. Non ha nulla a che invidiare alla classica colomba: è soffice, aromatizzata all’arancia e ha una glassa di zucchero e mandorle che si scioglie in bocca. Se volete mettervi all’opera, munitevi dello stampo adatto e facciamo nascere la colomba di Pasqua facile!
INGREDIENTI:
- 290 g farina manitoba
- 210 g farina 0
- 100 g zucchero semolato
- 140/150 ml acqua
- 100 g burro
- 4 g lievito di birra secco
- 3 uova
- buccia grattugiata di 2 arance
Per la glassa:
- 40 g mandorle frullate
- 10 g amido di mais
- 100 g zucchero semolato
- 1 albume
- zucchero a velo q.b
- mandorle per decorare q.b
PROCEDIMENTO:
Preferibilmente in una planetaria, impasta le due farine con il lievito sciolto in un po’ d’acqua (presa dal totale). Aggiungi lo zucchero, il burro a pezzetti, le uova e la scorza delle arance. Versa lentamente tutta l’acqua e impasta per almeno 10 minuti. Disponi il composto all’interno di un contenitore coperto fino al suo raddoppio. Trascorso il tempo, trasferisci l’impasto su un piano di lavoro, schiaccialo con i polpastrelli, arrotolalo su sé stesso e ripeti questo passaggio di nuovo. Dividi l’impasto in due. Una parte la schiacci con i polpastrelli, la arrotoli e crei un filone. Cerca di dare la forma del corpo della colomba, modellando con le mani la testa e la coda. L’altra parte, la schiacci sempre con i polpastrelli, la arrotoli su se stessa e crei un filone a forma di ferro di cavallo. Disponi quest’ultimo all’interno dello stampo a forma di colomba (750 g) nella parte delle ali e sovrapponici la parte del corpo. Copri con pellicola e fai lievitare al caldo fino al raddoppio.
Per creare la glassa, unisci in una ciotola l’albume, le mandorle, l’amido e lo zucchero.
Trascorso il tempo di lievitazione, distribuisci sulla colomba la glassa. Aggiungi lo zucchero in granella, qualche mandorla e spolvera con zucchero a velo.
Inforna a 185° per circa 40 minuti, nella parte più bassa del forno in modalità statica.
