
Una cheesecake monoporzione golosissima ma light! Una vera delizia, considerando l’uso della crema al caramello salato che non ha certo bisogno di presentazioni. Ho scelto di prepararla senza zuccheri aggiunti ma con dolcificante (per chi ama comunque il sapore “dolce”), ma posso assicurarvi che anche senza quest’ultimo risulterà buonissimo e “dolce” grazie alla presenza del caramello salato. Logicamente scegliete biscotti zero zuccheri e il gioco è fatto.
Vediamo insieme come prepararla.
INGREDIENTI: (Per una cheesecake monoporzione)
- 4 biscotti (50 g circa) digestive zero zuccheri
- acqua q.b
- 80 g ricotta pecora
- 70 g yogurt greco bianco 0% grassi
- 0,8 g dolcificante
- crema al caramello salato q.b
- anacardi e cioccolato fondente q.b per decorazione
PROCEDIMENTO:
Frulla i biscotti all’interno di un mixer, trasferiscili in una ciotola e versa poco alla volta l’acqua fino ad ottenere un composto umido ma non troppo bagnato. Su un piatto o vassoio disponi un piccolo pezzo di carta forno (in questo modo si eviterà che si attacchi sul fondo e sarà più facile trasferire la cheesecake su un piatto da portata senza il rischio che si rompa) e sovrapponi il coppapasta. All’interno dell’anello inserisci i biscotti sbriciolati e compatta bene con i polpastrelli livellando bene. Riponi in frigorifero.
Nel frattempo prepara la crema unendo lo yogurt, la ricotta, il dolcificante e mescola tutto in modo omogeneo. Utilizzala per riempire il coppapasta per metà, aggiungi una colata di crema al caramello salato e spalmalo. Termina con un ultimo strato di crema allo yogurt ben livellata e fai rapprendere in frigorifero per circa due ore.
Aiutati con un coltello a staccare i bordi della cheesecake e poi sformala. Decora con ciò che più ti piace, io ho utilizzato anacardi e cioccolato fondente.
