CHEESECAKE AI FRUTTI DI BOSCO

Questa è per me la versione migliore della cheesecake ai frutti di bosco. Ne ho preparate tante in modi e con ingredienti diversi da questi, ma questa è decisamente la mia migliore cheesecake ai frutti di bosco mai preparata prima. Di seguito vi indico qualche trucchetto e passaggio fondamentale per una riuscita ottimale. E’ effettivamente una preparazione semplice ma porta con sé alcune insidie, ma se seguirete alla lettere tutte le indicazioni, sarà un gioco da ragazzi!

INGREDIENTI:

PER LA BASE:

  • 220 g biscotti al cacao e nocciole (preferibilmente altrimenti biscotti secchi di vario tipo)
  • 100 g burro fuso

PER LA CREMA:

  • 110 g di zucchero
  • 2 tuorli
  • 3 fogli colla di pesce
  • 250 g mascarpone
  • 80 g formaggio spalmabile
  • 250 g panna fresca
  • succo di mezzo limone

PER LA GELEE AI FRUTTI DI BOSCO:

  • 2 fogli di colla di pesce
  • 1 cucchiaio di zucchero
  • 150 g di frutti di bosco congelati o 300 g freschi

PER LA DECORAZIONE:

  • frutti di bosco freschi q.b
  • zucchero al velo q.b

PREPARAZIONE:

Inizia preparando la base, prediligi i biscotti al cacao e nocciole solo perché nell’insieme si sposano perfettamente, ma puoi utilizzare anche rimanenze di vari biscotti secchi che trovi in dispensa. Tritali con un frullatore e aggiungi il burro fuso. Mescola, amalgamando bene. Posiziona un sottotorta con sopra un anello con apertura a cerniera. Versa il composto di biscotti all’interno dell’anello, compatta e livella al meglio con il dorso di un cucchiaio. Trasferisci il frigorifero.

In un pentolino, a fuoco basso, unisci i tuorli, lo zucchero, il succo di limone e continuando a mescolare con una frusta a mano, porta il composto ad una temperatura di 85° (dovrai misurarlo con un termometro da cucina). In seguito con una planetaria o con delle fruste elettriche montali fino al raffreddamento.

Nel frattempo prepara la crema: fai ammorbidire la colla di pesce in acqua fredda e unisci in una ciotola il formaggio spalmabile, il mascarpone, lo zucchero e la panna fresca semi montata. Con una frusta a mano incorpora delicatamente tutti gli ingredienti tra loro. Unisci anche il composto dei tuorli, e per ultimo aggiungi i fogli di colla di pesce ben strizzati e fatti sciogliere in un pentolino con pochissimo latte o acqua.

La crema è pronta per essere versata all’interno dell’anello. Cerca con una spatolina di livellarla al meglio e trasferisci in freezer per 2 ore.

Prepara la gelèe mettendo in un pentolino i frutti di bosco (io ho messo anche delle fragole) con lo zucchero. Falli ammorbidire ci vorranno 5 minuti, frullali e passali in un colino a maglia stretta. Aggiungi per ultimo i fogli di colla di pesce precedentemente immersi in acqua fredda per 10 minuti e ben strizzati. Versa la gelée all’interno dell’anello, sopra la crema e riponi in freezer per 2 ore.

Lava accuratamente i frutti di bosco e asciugali con un panno.

Trascorse le due ore, togli l’anello e copri tutta la superficie con tantissimi e freschi frutti di bosco.
