Questa ricetta nasce dalla voglia irrefrenabile di qualcosa di stuzzicante, croccante ma allo stesso tempo leggero. Ho deciso di preparare le crocchette di ricotta al forno per renderle più light senza rinunciare al gusto. La morbidezza della ricotta si sposa perfettamente con la panatura croccante e il cuore di pomodoro. Solo 15 minuti per portare in tavola queste delizie.
INGREDIENTI:
- 400 g ricotta pecora
- concentrato di pomodoro q.b
- 2 uova
- farina q.b
- pangrattato q.b
- sale q.b
- pepe q.b
PROCEDIMENTO:
Il passaggio fondamentale per questa ricetta, valido sia per la cottura in forno che per la frittura, è quello di far scolare per bene la ricotta in un colino. Una volta asciutta, inserite la ricotta nelle fuscelle o negli stampini fino a metà. Ricavate un buco al centro e riempitelo con del concentrato di pomodoro. Ricoprite con altra ricotta. Sbattete le uova con sale e pepe. Sformate le ricottine e passatele prima nell’uovo, poi nella farina, poi di nuovo nell’uovo e per ultimo nel pangrattato. Disponetele in una leccarda rivestita di carta forno un po’ oliata e aggiungete un filo d’olio sopra. Cuocete in forno a 180° per 15 minuti (girale a metà cottura). Una volta sfornate aggiungete un pizzico di sale e gustatele.
