Spesso dagli abbinamenti più semplici, nascono piatti sensazionali, come in questo caso. Questo primo piatto nasce da tanta fame, quindi dalla voglia di mangiare qualcosa piuttosto velocemente ma che allo stesso tempo mi appagasse e devo dire che l’obiettivo è stato centrato. Soprattutto perché la mia dispensa era molto poco fornita e invece…ecco uno dei miei primi piatti preferiti che si prepara in pochissimo tempo, con pochi ingredienti, perfettamente bilanciato nel gusto, leggero e 100% vegetale.
INGREDIENTI:
- 2 zucchine
- sale q.b
- 10/12 anacardi
- olio e.v.o q.b
- penne rigate 110 g
- scorza di 1 limone
- 1 fetta di pane
PROCEDIMENTO:
Taglia le zucchine a dadini e cuocile in una padella antiaderente con solo un pizzico di sale. Frulla la fetta di pane in modo grossolano, mantenendo quindi delle briciole piuttosto grandi e tostala in un padellino. In un frullatore inserisci le zucchine cotte, gli anacardi, il filo d’olio e frulla tutto insieme.
Cuoci la pasta.
Nel frattempo, trasferisci il pesto nella stessa padella in cui le hai cotte in precedenza, versa circa mezzo mestolo di acqua di cottura, scola la pasta al dente e uniscila al pesto. Una volta mantecata, impiatta, aggiungi le briciole di pane tostato e infine la scorza di limone grattugiata.
