PROCEDIMENTO:
In una padella fai rosolare la cipolla tagliata finemente con l’olio. Aggiungi le fave con mezzo bicchiere d’acqua e lascia cuocere. Aggiusta di sale. Taglia il guanciale a listarelle e fallo rosolare in un pentolino senza aggiungere altre fonti di grasso fino a quando sarà croccante. Uniscilo alle fave ormai cotto e fai insaporire tutto insieme. Cuoci i Torvicelli in acqua bollente salata e nel frattempo prepara la cremina di pecorino: preleva circa 1/2 tazza di acqua di cottura e lasciala intiepidire. Questo passaggio è fondamentale per non far si che la cremina “impazzisca”. Una volta raffreddata uniscila poco alla volta al pecorino grattugiato fino ad ottenere una cremina omogenea e liscia.
