Delle torrette di melanzane grigliate e farcite a strati di mozzarella, pomodoro, parmigiano e profumatissimo basilico. Ci vuole poco tempo, sono facilissime da realizzare e soprattutto sono un piatto unico da servire. Si possono preparare in anticipo e scaldare in forno qualche minuto prima di mangiarle. Per una resa ottimale, consiglio di utilizzare melanzane di stagione, un fior di latte di qualità, basilico fresco e pomodori datterini.
INGREDIENTI:
- 2 melanzane
- basilico fresco q.b
- cipolla q.b
- 400 g (240 g sgocciolato) pomodori datterini in latta
- sale q.b
- Parmigiano Reggiano q.b
- 300 g circa Fior di latte
- olio evo q.b
PROCEDIMENTO:
Dopo aver lavato e tagliato le melanzane ad uno spessore di circa mezzo centimetro, fai scaldare una piastra o griglia. Spennella le fette di melanzane con un po’ d’olio e disponile sulla piastra una volta calda. Girale dopo qualche minuto e termina la cottura. Nel frattempo in un tegame fai rosolare l’olio con la cipolla e versa i pomodori datterini. Fai insaporire, aggiungi il sale, il basilico e fai cuocere. Taglia il fior di latte a fettine e frulla il pomodoro con un frullatore ad immersione.
Crea le torrette di melanzane, cercando di selezionare le fette più grandi e quelle più piccole: quelle più grandi formeranno le basi e le altre in ordine decrescente formeranno le torrette. Disponi in questo ordine la fetta più grande di melanzana, ricoprila di pomodoro, poi di parmigiano, aggiungi una fetta di mozzarella, una sporcata di pomodoro, una foglia di basilico e ricopri con un altra fetta di melanzana, ripetendo la stessa sequenza a seconda di quanti strati decidi di fare.
Inforna le torrette a 180° per circa mezz’ora.
